Fish & Camarón is the realized dream of Chef Jacquie Tron and her husband and business partner, Ignacio Garcia-Casas, to open a healthy, Mexican-themed shrimp cocktail restaurant in the food court of a mall, with the eventual plan of franchising the concept. Their first store opened in PlazAmericas in 2010. The menu is based on Jacquie’s recipes of regional specialties like shrimp cocktails and fish tacos, with an emphasis on low-fat, non-processed cooking. It’s very light, fresh, authentic and tasty; a welcomed departure from typical food-court options.

The menu is based on Jacquie’s cooked-from-scratch recipes of regional fish and shrimp specialties like shrimp cocktails, ceviche tostadas, fish tacos, fresh salads and more, with a real emphasis on low-fat, non-processed cooking. It’s all made to order, very light, fresh, authentic and tasty; a welcomed departure from typical food-court options. A large selection of delicious, hand-made sauces and salsas are available so guests can customize their orders.

Genuine Hospitality Consulting was involved with the writing of the business plan, as well as preparing opening budgets and forecasting sales and profit. We coordinated and assisted in the pre-opening phase, including: obtaining permits and inspections, choosing the POS system, modifications and repairs to the physical plant, vendor selection, menu writing and pricing, staffing and preparing various checklists. We codified, tested, adjusted and re-tested Jacquie’s concepts, eventually writing standardized recipes.

These recipes were all written on custom Genuine Hospitality Consulting software that allows the client to easily modify them, including changing the quantities with one keystroke. They are also tied into the inventory to instantly calculate the cost per portion. We provided all necessary help in terms of developing and implementing systems and procedures including sanitation, pricing, purchasing, inventory, staffing, payroll and accurately ascertaining and maintaining margins.

Chapter Two

As of August, 2012, Fish & Camarón has opened it's new location in the prime Memorial City Mall food court in Houston, Texas!
